Roasted Butternut Squash Soup

Happy fall! With the daytime temps in Florida dipping below the 90 degree mark, I thought it was time for a nice, hearty soup. Actually, this is a good transition-to-fall soup because it’s not heavy, and instead of using Thanksgiving-style spices like sage and allspice, I use thyme to give it flavor.
